Online Auction Description

The Toll House Restaurant was widely known for excellent food, reflecting the tastes of the time. This cookbook is true to its readers. Today's cook may find it a bit heavy on desserts and short on fresh vegetables but, hey, that's the way people ate in the l940s.


These were the early days of color illustrations and you will find only a few groaning-board-type meals in living color. Others appear in black and white.


Mrs. Wakefield felt she needed to include menu suggestions and “Helpful Hints” covering an astonishing variety of situations, including how to care for your gas range and “Points to Remember in Automatic Refrigeration.” This is a period piece, indeed!


If you ever wondered who created the original recipe for chocolate chip cookies? – look no further. Mrs Wakefield's Toll House Chocolate Crunch Cookies were so popular that cooks were willing to chop “2 bars (7 oz) Nestles yellow label semi-sweet chocolate” into “pieces the size of a pea” in order to make them. Nestles wasn't slow to catch on and – ta da! - chocolate chips and morsels were born!


This copy of Mrs Wakefield's cook book shows evidence of slight water damage – some buckling of pages and faint staining on the lower, outer edge. The binding is tight and the pages are clean and hardly show their age – no yellowing.


175 pages of heavy paper, weighing in at almost 2 lbs. Dark red cloth binding shows wear at both ends of the spine. Otherwise, only slight shelf rubbing is visible. An owner's name is written rather discreetly in ink on the front fly leaf along the bottom edge.
