Louis Szathmáry (pronounced ZATH-ma-ree) was born and educated in Hungary. During World War II, he was held in Russian prison camps, ending up as a displaced person in the US occupation zone in Austria. He arrived, almost penniless, in the US in 1951, worked two jobs until he was able to get his own tiny restaurant, the well-known Bakery Restaurant in Chicago. He was famous also for his cookbook collection (reported to be over ten thousand volumes), a collection of Hungarian literature and some letters of Hungarian composer Franz Lizst. He also had a fabulous collection of historical presidential documents concerning food, from George Washington to George Bush.

As a chef, he developed the first frozen dinners for Stouffer Foods and designed a portable military kitchen that could be dropped by parachute and assembled in short order.


He gave recipes away freely and when the recipients complained that what they made did not come out like his, he said, “The best-kept secret of the good chef is his long training and daily performance. It’s not enough to make a dish once and when it’s not up to standard, to declare, ‘the recipe is no good.’”


The Chef's Secret Cook Book is full of his own great recipes written as one friend talking to another. And it's stuffed with the secrets he thought would help you make the most of the recipes. “The best cabbage is always the smallest head among all the heads of the same weight.” “It's important to cover the pan while the bottom of the chicken is frying, as this keeps it tender. Frying the pieces without a cover after turning makes the skin crisp.”


288 pages, some line drawing to illustrate cooking techniques.

This is not the Book Club Edition that came out that same year.
